Organic Tea - How to brew your own

There are a variety of different blends of certified organic tea that you can choose from. They are choosing it because it is produced free of chemical fertilizers or pesticides and herbicides.

Some examples of organic tea include Assam, Ceylon, English Breakfast organic tea, Gold Dragon Jasmine, Gyokura organic tea, Orange Pekoe, Orchid Oolong, Imperial Keemun, Osprey Gunpowder, Peacock #1, Pearl River Green organic tea, Peppermint organic tea, Sencha, Spearmint, Tanzania and Tianmu Ming Dynasty. You can also find it in flavors such as blueberry, maple and vanilla.

You can drink natural organic tea either hot or cold. Follow these directions for brewing:

Hot brewing method: Use 2-4 teaspoons per 4 cup pot (you vary the strength by the amount used); pour in boiling water that has been freshly drawn. (Do not overboil the water as this will de-oxygenate the water and affect the flavor of the teas). Steep it for 2-7 minutes depending upon the strength desired. Stir after 2 minutes (if you used boiling water virtually all the leaves will sink to the bottom ), let it stand for another 1 to 5 minutes and then gently pour into your cup. Milk and a dash of sugar will help capture the malty character and give it a pleasant smooth flavor, but it is perfectly acceptable to drink it right up.

Iced brewing method: (to make 1 liter/quart): Place 5 teaspoons into a pot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over it. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour it into your serving pitcher straining the leaves. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. A rule of thumb when preparing fresh brewed iced is to double the strength of hot since it will be poured over ice and diluted with cold water. The iced way tends to ‘cloud’ or go ‘milky’ when poured over ice. This commonly happens with high quality teas.
