Stir Fry Sweet and Sour Chicken
Ingredients
Three boneless, skinless breasts or thighs
sesame seeds (optional)
One green bell pepper, sliced into strips
One clove of garlic, pressed
2-1/2 tablespoons coconut oil
One jar of La Choy sweet and sour chicken sauce
Directions
Cube meat into desired chunks; set aside. Heat oil until melted over low heat. Add sesame seeds & chopped garlic; stir to mix together, turn up heat to medium high & add meat. Stir fry until meat is thoroughly cooked then add bell pepper & sauce. Stir then turn down heat to low. Cover & simmer for about ten minutes until bell pepper is soft
Sweet and Sour Chicken or Pork
Ingredients
Four to six ounce boneless breasts or thighs
Oil for frying
Batter Ingredients
One egg
1/3 cup milk
1/2 cup flour
1/2 teaspoon baking powder
Sauce Ingredients
2/3 cup sugar
Two tablespoons rice vinegar
Three tablespoons ketchup
3/4 cup water
Two tablespoons cornstarch
Directions
Mix all ingredients in a saucepan. Stir over medium heat until sauce thickens. Dip meat in batter; deep fry until done. Set aside. Dip in sauce or pour over meat. You may also add pineapple green peppers, tomatoes & sesame seeds.
Crock Pot Sweet and Sour Chicken
Ingredients
1/2 cup finely chopped pepper
1/2 cup finely chopped onion
Three boneless, skinless breasts or thighs
One (10 ounce) jar sweet and sour chicken sauce
One (15 1/4 ounce) can of pineapple chunks, drained
Three tablespoons cornstarch
Three tablespoons cold water
Hot cooked rice
Directions
Place pepper & onion in a pot. Top with meat. Pour sauce & pineapple chunks over all. Cover. Cook on low seven to eight hours (or on high for four hours). Remove meat; keep warm. Blend cornstarch & water. Stir in juices. Cover. Cook on high ten to fifteen minutes until thickened. Serve over hot rice along with a crisp green salad.
Sweet and Sour Chicken Casserole
Ingredients
Two boneless, skinless breasts or thighs
One package Suzi Wan vegetable & rice, cooked
One cup rice, cooked
One can chop suey vegetables
One can sliced water chestnuts
One small jar pimentos
One can chunk pineapple (save juice)
One can broth
One bottle sweet and sour chicken sauce
Directions
Brown meat in butter. Season with Mrs. Dash. Sauté in half of broth; cool. Cut in bite size chunks. Mix broth, juice & sauce. Add to rice. Bake at 350 degrees for 45 minutes.
