Salad recipes were not listed in many of the old cookbooks of our great grandmothers but today whole cookbooks are devoted to salad recipes. There are an abundance of web sites devoted to just salad recipes.
The serving of salads has become so popular that we find almost every type of food being used in them. Restaurants have added pages to their menus to cater to the demand for variety in the salad recipes. Salads, once relegated to a small dish and served as “side” are now served as a main meal. It first expanded as a favorite in the summer on those hot humid days when a crisp salad was just what was needed. But salads are becoming increasingly popular at other times of the year and today the salad recipes have names which have grown from a simple tossed or Caesar to main meal, pasta, bean, gelatin, fruit, and grain. They provide an amazingly healthy addition to any meal.

Creamy Chicken Pasta Salad – 4 servings
3 skinless, boneless, chicken breast halves
¼ cup steak sauce
8 ounces pasta (your choice)
1 sweet onion, diced
1 cup tomatoes cut into bite size pieces
1 cup ranch dressing
Brush chicken with steak sauce and marinate 15 minutes.
Cook pasta 8-10 minutes and drain. Let cool.
Grill chicken 6-8 minutes per side. Cool and cut into bite size pieces.
Mix all ingredients in large bowl and serve.
This Cucumber Salad Recipe is a great summer side dish.
3 ounce package lime gelatin
2 medium cucumbers
1 tablespoon minced onion
½ cup mayonnaise
½ cup sour cream
Dissolve gelatin in ¾ cup boiling water and mix well. Cool to room temperature
Slice cucumbers in half, remove seeds. Grate.
Add all ingredients to gelatin. Stir well.
Pour into dish and refrigerate until set.
Experiment and create your own salad recipes. Add color to make it more appealing. Make them as nutritious as possible. Be sure to add nuts and seeds for they are packed with nutrients and will provide you with Vitamin A and E.
