Easy Orange Chicken
Ingredients
Two tablespoons plus two teaspoons butter
1-1/4 pounds boneless, skinless breasts or thighs
Two cups sliced mushrooms
Two teaspoons all purpose flour
2/3 cup water
1/4 cup thawed, frozen concentrated juice
Two packets instant broth
1/2 cup thinly sliced scallions (green onions)
One cup canned mandarin oranges, heated
Directions
In skillet, heat butter until bubbly and hot; add meat and cook until browned on both sides. Remove from skillet and set aside. In same skillet, cook mushrooms over high heat, stirring occasionally, until all liquid has evaporated. Sprinkle mushrooms with flour and stir quickly to combine. Gradually stir in water. Add juice and broth mixture. Stirring constantly, bring to a boil. Reduce heat; add meat and let simmer for about three minutes. Serve orange chicken sprinkled with scallions and topped with mandarin oranges.
Stir Fried Orange Chicken
Ingredients
Four boneless, skinless breast halves
One teaspoon soy sauce
One teaspoon cornstarch
1/2 teaspoon ground ginger
One clove garlic, pressed
1/2 cup juice
Two teaspoons cornstarch
Two teaspoons vegetable oil
Three cups sliced fresh mushrooms
1/2 cup shredded carrots
Two cups hot cooked rice
Directions
Trim fat from breast halves. Cut meat into ¼-inch strips. Mix soy sauce, one teaspoon cornstarch, ginger and garlic in medium glass or plastic bowl. Stir in meat. Cover and refrigerate 30 minutes. Mix juice and two teaspoons cornstarch until cornstarch is dissolved. Heat one teaspoon of the oil in a skillet over high heat. Add meat mixture; stir fry until meat turns white. Remove meat from skillet. Add remaining one teaspoon oil to skillet. Add mushrooms and carrots; stir fry about three minutes or until mushrooms are tender. Stir in meat and juice mixture. Heat to boiling, stirring constantly. Boil and stir about 30 seconds or until thickened. Serve orange chicken over hot cooked rice.
Honey Baked Orange Chicken
Ingredients
¼ cup frozen juice concentrate
One tablespoon lemon juice
Two tablespoons plus one teaspoon honey
½ teaspoon ginger
Four boneless, skinless breast fillets
One tablespoon fruit juice sweetened marmalade
Directions
In baking dish, mix together juice concentrate, lemon juice, two tablespoons honey, and ginger. Add breast fillets, turning to coat all sides. If time permits, marinate meat for ten minutes. Bake meat uncovered at 400 degrees for eight minutes. Baste with pan juices. Bake an additional eight minutes, then baste again. Glaze meat with a mixture of marmalade and remaining one tablespoon honey; continue to bake eight to ten minutes or until done. Transfer meat to warmed serving plate. Reduce pan juices until thickened and pour over meat. Serve honey orange chicken with rice, if desired.
