Cheese filled Manicotti

14 pieces (8oz.) Manicotti, uncooked
3 ½ cups ricotta cheese
2 cups shredded mozzarella cheese, divided
½ cup grated parmesan cheese, divided
2 eggs
2 tablespoons freshly diced parsley
½ teaspoon salt
¼ teaspoon ground black pepper
1/8 teaspoon ground nutmeg
1 ½ cups spaghetti sauce

1.Heat oven to 350 degrees
2.Cook pasta according to package; drain
3.Meanwhile, stir together ricotta cheese, half mozzarella cheese, ¼ cup parmesan cheese, eggs, parsley, and seasonings
4.Spoon about 1/3 cups cheese mixture into each noodle tube; place in baking pan
5.Pour spaghetti sauce; sprinkle with remaining mozzarella and parmesan cheese
6.Cover with foil and back for 35 min or until hot and bubbly. Serves 7
