Here is the recipe for a traditional breakfast:
• 8 slices of Shannon Traditional Ireland bacon(premium)
• 4 slices of Traditional Ireland Sausage(Bangers)
• 4 slices of Shannon Traditional White Breakfast Pudding
• 4 slices of Shannon Black Breakfast Pudding
• 4 medium size tomatoes
• 4 Eggs

Sauté bacon over low heat, turning frequently until done. Remove and drain on towels. . Keep in mind that traditional Ireland bacon is not like the kind we know; it is not cooked crisp hard. Place sausage in pan and cook until brown on all sides. Cut the tomatoes in half and fry with the slices of pudding in the bacon fat. Remove and keep hot. Irish recipes for the main course of the day follow. I chose the most popular of Irish recipes for dinner.
Corned beef Brisket without cabbage:
• You will need 1 (8-10 lb) beef brisket
• 4 garlic cloves peeled
The brine:
• ½ cup of white vinegar
• 4 tablespoons sugar
• 2 quarts water
• 1 cup of kosher salt
• 3 bay leaves
• ½ teaspoon of mustard seeds
• 1 teaspoon peppercorns
The simmering liquid:
• Water
• ½ teaspoon whole allspice
• ¼ teaspoon whole cloves
• 1 teaspoon peppercorns
• ½ teaspoon mustard seeds
• 4 garlic cloves, sliced
Combine all the brine ingredients, bring to a boil then cool. Put the brisket the 4 garlic cloves and the brine in a large roasting bag. Make sure all the meat is covered by the brine and tie off tightly. Place in a large pot, enough to hold it all and refrigerate for 6-7 hours. When the time is up discard the brine. The meat should be thoroughly rinsed and placed in a Dutch oven. Add enough water to come ¾ ways up the brisket. Add the rest of the simmering liquid ingredients and bring to a boil and skim off any foam. Reduce the heat to low simmer. Cook for at least 3 hours. Serve with a cold beverage like soda or beer.
Irish dessert recipes:
Scones
• 1 cup of white flour
• ¼ pound of butter (softened)
• 1/2 teaspoon baking powder
• 1 egg
• 2 ounces of sugar
• 2 ounces of milk
• Raisins and walnuts optional
Mix the flour and the baking powder. Add the butter and blend until the mixture is butter colored. Add the sugar and continue to mix well. Add half of the beaten egg and all the milk. Add raisins or nuts if you want. Mix well to make sticky dough. Knead the dough on a floured surface for 5 minutes. Cut the dough into rounds and place on a sheet or in a hot frying pan. Brush the tops of the cones with remainder of beaten egg. Place walnut halves on top. Bake at 350 for 15 to 20 minutes.
