Barry Patch Brownie Fruit Pizza

Ingredients

  • One package (19.8 ounces) fudge brownie mix
  • 1/3 cup chopped almonds
  • One package (8 ounces) cream cheese, softened
  • One tablespoon granulated sugar
  • ½ teaspoon vanilla
  • Two cups thawed frozen whipped topping
  • One pint fresh strawberries, divided
  • ½ cup fresh raspberries
  • ½ cup fresh blueberries
  • Powdered sugar for garnishing

Instructions

Preheat oven to 375 degrees. Prepare brownie mix according to package directions. Stir in almonds. Spread batter onto bottom of greased fourteen-inch baking pan. Bake eighteen to twenty minutes or until set. Cool completely. In a large bowl, combine cream cheese, sugar and vanilla; mix until smooth. Fold in whipped topping. Chop enough strawberries to measure ½ cup; gently stir into cream cheese mixture. Spread strawberry mixture evenly onto brownie. Slice remaining strawberries; arrange on brownie. Top with raspberries and blueberries. Garnish with powdered sugar. Yields sixteen servings.

Peachy Fruit Pizza

Ingredients

  • One package (18 ounces) refrigerated sugar cookie dough, softened
  • ½ cup chopped pecans, divided
  • One package (8 ounces) cream cheese, softened
  • One tablespoon powdered sugar
  • ½ teaspoon vanilla
  • ¾ cup peach preserves
  • One to two peaches, peeled and coarsely chopped (about one cup)
  • One cup sliced strawberries
  • Two kiwis, peeled and sliced
  • 1-1/2 cups thawed frozen whipped topping

Instructions

Preheat oven to 350 degrees. Place cookie dough in a large bowl; mix in 1/3 cup of pecans. Shape dough mixture into a ball. Place in center of greased, foil covered fourteen-inch pan; flatten slightly with palm. Pat out dough with fingers to a twelve-inch circle. Bake eighteen to twenty minutes or until lightly browned. Cool completely. Carefully remove foil. In medium bowl, combine cream cheese, powdered sugar and vanilla; mix well. Spread cream cheese mixture evenly onto cookie crust; cover evenly with preserves. Top with peaches, strawberries and kiwi. Sprinkle with remaining pecans. Pipe whipped topping around edge to decorate. Yields sixteen servings.
