There are so many chicken recipes out there to choose from! Chicken recipes are often easy and most people like them. You can find and create many variations to chicken recipes that will be pleasing to all tastes, including Mexican, Italian, and French themed chicken recipes. Here are three of my favorite chicken recipes:
Balsamic Poultry and Pears
Ingredients
Two ripe, pears, cored and thinly sliced
½ cup thinly sliced red onion
One tablespoon olive oil
½ teaspoon dried thyme
½ teaspoon salt
¼ teaspoon pepper
one to two pounds boneless, skinless breasts or thighs
one tablespoon balsamic vinegar
Directions
Preheat oven to 450 degrees. Place pears and onion slices in a single layer in a 9×13 baking pan. Combine olive oil, thyme, salt, and pepper in a small bowl. Spoon half of the mixture over pears and onions. Cover the dish baking pan tightly with foil; bake for ten minutes. Meanwhile, place meat in remaining seasoning mixture, turning to coat on all sides. Uncover pear and onion slices; arrange meat on top and drizzle with vinegar. Bake uncovered for twenty minutes.
Cheesy Chickeny Enchiladas
Ingredients
One medium onion, chopped
Two tablespoons butter or margarine
1-1/2 cups breast or thigh pieces
one (12 ounce) jar picante sauce or salsa
One (3 ounce) package cream cheese, cubed
One teaspoon ground cumin
Two cups extra sharp cheddar cheese, shredded
8 (six-inch) flour tortillas
Directions
Cut meat into chunks and brown in skillet. Remove and drain. Cook onion in butter or margarine. Stir in meat and ¼ cup of the picante sauce or salsa, cream cheese, and cumin. Cook until thoroughly heated. Stir in one cup of shredded cheddar cheese. Put 1/3 cup of mixture onto each tortilla and roll up. Place tortillas, seam side down, into a 9×13 baking dish. Top with remaining cheese and picante or salsa. Bake at 350 degrees for fifteen minutes. You may use different meats such as turkey, minute steak, or ground beef.
Leftover Meat and Veggie Dish
Ingredients
One package patty shells
Two cans cream soup (any variation)
1-1/2 cooked breasts or thighs, cut into cubes (you may also use turkey meat)
¾ cup leftover vegetables (broccoli, peas, carrots, mushrooms)
Directions
Bake patty shells as directed on package. Meanwhile, combine and heat soups, undiluted. Add meat and vegetables. Warm just until heated through. Spoon into patty shells and serve.
