Ingredients
Six boneless, skinless breasts or thighs
Two tablespoons melted butter
½ cup grated parm. cheese
¼ cup dry bread crumbs
one tablespoon oregano
one tablespoon parsley flakes
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon pepper
Directions
Mix together last seven ingredients. Preheat oven to 400 degrees. Spray baking pan with nonstick cooking spray. Dip meat pieces in melted butter. Coat with crumb mixture. Bake for 20 to 25 minutes or until meat is tender.
Italian Chicken Parmesan
Ingredients
½ cup seasoned bread crumbs
½ cup grated parm. Cheese, divided
1-1/2 teaspoon dried oregano, divided
½ teaspoon dried basil
½ teaspoon salt
¼ teaspoon pepper
One egg
Four boneless skinless breast halves
Two tablespoons butter or margarine
Two cups meatless spaghetti sauce
½ teaspoon garlic salt
One cup shredded mozzarella cheese
Hot cooked fettuccine or pasta of your choice
Directions
In a bowl, combine bread crumbs, ¼ cup cheese, one teaspoon oregano, basil, salt and pepper. In another bowl, combine the egg and water. Dip meat into egg mixture then coat with crumb mixture. In a skillet, cook meat in butter on both sides until juices run clear. Meanwhile, combine the spaghetti sauce, garlic salt and remaining oregano in a saucepan; heat through. Spoon over meat, sprinkle with mozzarella and remaining parmesan. Serve over pasta.
Fried Chicken Parmesan
Ingredients
½ cup fine dry bread crumbs
1/3 cup grated parm. Cheese
two tablespoons fresh parsley, chopped
¼ teaspoon garlic salt
¼ teaspoon pepper
six breast halves, skinned and boned
¼ cup Italian dressing
vegetable cooking spray
Directions
Combine first five ingredients; set aside. Dip breast halves in salad dressing; dredge in bread crumb mixture. Place in a 9×13 baking pan that has been coated with cooking spray. Bake at 350 degrees for 45 minutes or until done.
