Chicken Noodle Soup
Ingredients
One whole boiler fryer (four pounds) cut up
Four stalks of celery, chopped
Two large onions, diced
Salt to taste
Pepper to taste
Four tablespoons parsley flakes
Four carrots, diced
One pound egg noodles
One large can broth
Directions
Place meat pieces, celery, onion, parsley, salt and pepper in a large pot. Cover with water and cook for one hour or until meat is tender. Remove meat from stock; let cool and remove meat from bones. Dice meat.
While meat is cooling, cook diced carrots until tender. Return meat to pot and add cooked carrots, including water in which carrots were cooked. Add broth. Cover pot and simmer on low heat for 3/4 hour. Add noodles and continue to cook on low heat until noodles are at desired consistency. Vegetable Chicken Noodle Soup
Ingredients
One whole boiler fryer
One (8 ounce) package wide noodles
One box frozen peas
One box frozen corn
1/2 cup onion, chopped
One cup carrots, chopped
Salt to taste
Pepper to taste
Directions
Cook meat in a large pot. Cool and remove meat from bones. Add vegetables, salt and pepper to meat broth. Boil meat and vegetables to partially cooked. Add noodles. Cook until noodles are done. Another great chicken noodle soup that can be served for lunch with sandwiches or with a salad.
Creamy Chicken Noodle Soup
Ingredients
46 ounces broth
46 ounces water
Two packages frozen noodles
One can cream of celery
One pound boneless, skinless breasts or thighs, cut up
One teaspoon. Mrs. Dash’s Seasoning
Directions
Bring broth and water to a boil. Add noodles and boil 30 minutes. Meanwhile, cook meat until white. Add meat to broth and noodles and cook ten more minutes. Add cream of celery. If too thick, add more water. Cook ten more minutes. Add seasoning and serve.
