Chicken Casserole - Quick and easy recipes for your family



chicken-casserole.jpgA chicken casserole is an easy and simple meal choice for busy families. I enjoy cooking different variations of chicken casserole at least once a week in my home. You can find a chicken casserole recipe for almost any taste using vegetables, rice, noodles, biscuits, stuffing, salsa, and many more diverse ingredients. Here are three of my favorite recipes for chicken casserole:

Creamy Biscuit and Chicken Casserole

Ingredients
˝ large onion, chopped
1-1/2 teaspoon butter
4 cups breast or thigh meat, cooked and chopped
one (10-3/4 ounce) can condensed cream of celery soup
one cup sour cream
˝ cup milk
˝ cup pimiento, chopped
one cup cheddar cheese, shredded and divided
six frozen biscuits, thawed (or six Grands biscuits)

Directions
Preheat oven to 350 degrees. Grease the bottom and sides of a 9×13 dish. Sauté butter and onion until tender. Combine onions, meat, soup, sour cream, milk and pimiento in a medium bowl and mix well. Spoon mixture into prepared baking dish. Bake for fifteen minutes. Remove from oven. Sprinkle with ˝ cup of cheddar cheese. Arrange biscuits in a single layer over the top. Sprinkle with remaining cheese. Bake for twenty minutes longer or until biscuits are golden and the sauce is bubbly.

Divine Chicken Casserole

Ingredients
Two (10 ounce) packages frozen broccoli
One to two pounds boneless, skinless breasts or thighs, cooked
Two cans condensed cream of celery or mushroom soup
˝ cup mayonnaise
one teaspoon lemon juice
˝ cup corn flakes, crushed or bread crumbs
one cup cheddar or Swiss cheese, shredded

Directions
Layer broccoli on bottom of baking dish. Place breasts or thighs on top. Mix together soup, mayonnaise, and lemon juice. Pour on top of breasts or thighs. Spread on the cheese. Mix the crumbs with the butter and sprinkle on top. Bake at 350 degrees for 35 to 40 minutes.

Stuffing and Chicken Casserole

Ingredients
One (six ounce box) stuffing mix
Two cups cooked boneless and skinless breasts or thighs, cut into cubes
One (10-3/4 ounce) can condensed cream of mushroom soup
One (10-3/4 ounce) can condensed cream of celery soup
One soup can of milk
One teaspoon poultry seasoning

Directions
Heat oven to 325 degrees. Prepare stuffing according to package directions. Set aside. Spread meat cubes in a 9×13 baking pan. Mix soups and milk; pour over meat cubes. Sprinkle with poultry seasoning. Spread stuffing over top. Bake for thirty minutes. Let stand ten minutes before serving.
