Chicken Cacciatore - An italian favorite

Quick Chicken Cacciatore

Ingredients
One package (10.5 ounces) frozen breaded breast patties, partially thawed
One medium green bell pepper
One cup sliced mushrooms
One small onion, chopped
Eight ounces uncooked linguine, spaghetti, or pasta of your choice
Two cans (14-1/2 ounces each) Italian-seasoned diced tomatoes, undrained
One garlic clove, pressed
Fresh grated parmesan cheese

Directions
Cut patties into ¾ inch strips.  Cut bell pepper into thin strips.   Slice mushrooms and chop onion.  Cook pasta according to package directions.  Drain and keep warm.  Meanwhile, spray skillet with olive oil and add patty strips;  cook five minutes, turning frequently.  Add tomatoes, bell pepper, mushrooms, onions, and garlic.  Bring to a boil; cover.  Reduce heat; simmer eight to ten minutes or until vegetables are tender.  Serve over hot pasta.  Sprinkle with parmesan cheese.  Serve with a crisp salad and garlic bread.

Microwave Chicken Cacciatore

Ingredients
Two (16 ounce) cans tomatoes, broken up
Two (four ounce) cans mushrooms
Four tablespoons flour
Two cloves garlic, pressed
½ teaspoon basil
½ teaspoon oregano
½ teaspoon thyme
½ teaspoon salt
¼ teaspoon pepper
Two boneless breasts, split

Directions
Drain tomato liquid and mushroom juice into a 9×13 casserole dish.  Stir flour into juices, blending until smooth.  Add all spices and stir.  Arrange meat in the casserole dish.  Spoon tomatoes, mushrooms, and spice mixture over meat.  Cover with wax paper.  Microwave for 25 minutes, rearranging meat midway through the cooking period.  Let stand, covered, a few minutes before serving.  This chicken cacciatore recipe is great served over rice as well as pasta.

Crock Pot Chicken Cacciatore

Ingredients
3-4 pounds boneless, skinless thighs or breasts
One large onion, thinly sliced
Two large red or green bell peppers, sliced
Three cloves garlic, pressed
1/2 teaspoon
½ teaspoon oregano
One (6 ounce) can tomato paste
Fresh mushrooms, sliced
Two bay leaves
One (8 ounce) can stewed tomatoes with chilies
salt and pepper to taste
Two cups burgundy wine
Parmesan cheese
 
Directions
Place sliced onions on bottom of crock pot.  Add meat.  Stir together remaining ingredients and pour over meat.  Cook on low seven to nine hours or three to four hours on high.  Top with parmesan cheese.  Serve chicken cacciatore over pasta along with a fresh, green salad.
