I love making broccoli casserole. There are so many variations you can make. One of my favorite recipes is chicken divan. Although this isn’t a broccoli casserole, per se, it is still delicious. My husband’s grandmother makes the best chicken divan. I don’t have the recipe, but should get it someday since I like it so much.
The great thing about broccoli casserole is that you can use so many ingredients in it. You can add rice, cheese, chicken, ham, stuffing, and the list goes on. This is a versatile dish you can make for any occasion.
Below are some simple and easy recipes for broccoli casserole:
Broccoli Casserole with Rice
Ingredients:
Two (10 ounce) packages frozen florets
Two cans condensed cream of mushroom soup
Two cups instant rice
3/4 cup chopped onion
1/4 cup butter
One (16 ounce) jar cheese sauce
Salt to taste
Black pepper to taste
Cook rice as directed on box. Sauté onions in margarine until soft. Cook broccoli as directed on package and drain. Mix together florets, soup, rice, onion, butter or margarine, and cheese. Season with salt and pepper to taste. Place in a 9 by 13 inch dish. Bake for 30 to 40 minutes at 350 degrees.
Broccoli Casserole with Cheese
Ingredients:
½ stick margarine or butter
One roll crushed Ritz crackers
One bag frozen florets
One medium box Velveeta cheese
Brown butter or margarine and the crushed Ritz crackers in a skillet. Bring the frozen florets to a boil and cook for five minutes. Drain. Place in a baking dish. Cut Velveeta cheese into cubes and place on top. Pour browned Ritz on top. Bake at 350 degrees for 30 minutes.
Broccoli Casserole with Chicken
Ingredients:
Two 10-oz. packages of frozen florets
Four to six chicken breasts, cut and cooked
Two cans condensed cream of chicken soup
½ cup mayonnaise
One teaspoon lemon juice
½ cup corn flakes, crushed
One cup Cheddar or Swiss cheese, shredded
Place florets on bottom of a 9 by 13 baking dish. Place the chicken on top. Mix together chicken soup, mayonnaise, and lemon juice. Pour on top of the chicken. Next sprinkle the cheese on top of soup mixture. Mix the corn flakes crumbs with the butter and sprinkle on top. Bake at 350 degrees for 35 to 40 minutes.
